I haven't posted a reciped on here in a while so i thought i would post one of my recent favorites. This is one I came up with by watching people make it. It's very easy and quick.
2 bags of uncle ben's ready brown rice (the kind that microwaves in 90 seconds)
1/2 of a white onion chopped
1/4 cup chopped carrots (you can use the canned kind and chop them too but it tastes better with fresh carrots)
2 eggs
3 green onions chopped
1/4 cup snow peas (optional)
3-4 tbsp of butter
2 tbsp olive oil
tsp of soy sauce
salt and pepper to taste
1. In a large stir fry pan or wok heat the olive oil and buttter till butter is melted.
2. Add veggies, and cook for a minute.
3. Add Rice, continue to stir fry about 5 minutes or until the onions and carrots are cooked.
4. Scoot the rice all to one side of the pan add just a tiny bit more butter and crack 2 eggs into the empty spot on the pan.
5. Scramble the eggs and cook until done.
6. Mix the eggs into the rice throughly.
7. Add soy sauce, salt, and pepper and stir.
8. Enjoy!
You may add meat to the mix, cook the meat first and then add to the pan when you add the rice. Simple, easy, and delicious.
